A cousin of negroni, this aperitif has the right amount of sweetness, bitterness and bubbles... just what I need right now. 

You can also serve it in a big wine glass, like they do in Cortina d'Amprezzo where I first tried it.

Ingredients

  • 2 ounces vermouth. rosso
  • 1 ounce Campari
  • 8 ounces prosecco
  • soda, to top up
  • Orange slice/peel, for serving

Method: 

In a cocktail mixing jug with a handful of ice cubes  mix vermouth Rosso and Campari, stir and divide the mix in 2 old fashion glasses with a few ice cubes in. Add in the Prosecco; stir gently and  top up further with a bit of soda.  Garnish with an orange slice. Enjoy!
